Agretti is an Italian vegetable variety that is also known as "Saltwort, Roscana and Barba dif rate," with the later which literally means monk's beard. Agretti are long and slender and originated in a region outside of Rome, named Lazio. This green vegetable offers a crisp texture with a slight acidic flavor with salt-like notes.
