Also called “Mexican Parmesan” Cotija cheese is produced from cow’s milk and is described as being firm, crumbly and salty. Prior to being pressed and molded the cheese curds are milled into tiny pieces that contribute to its dry and crumbly texture. Traditionally made in Mexico, Cotija cheese is aged for 100 days and used in many Mexican-style dishes. Add to beans, tostadas, enchiladas or use as a garnish.
