Description/Taste
Yuzu Kosho is a Japanese paste made from fresh chiles and yuzu citrus. Chiles, traditionally red or green bird’s eye chiles, are fermented with salt and the zest and juice from fresh yuzu, creating a powerful trifecta of salt, spice, and fragrant acidity. This paste shines when added to sauces or slaws that top rich fatty meat or add more citrus juice to create a sauce for dipping tempura, sushi, and gyoza.
