Extra Black Cocoa Powder is cocoa powder that has been heavily “dutched” or “dutch processed” which means it was washed with an alkalizing solution to neutralize acidity. This process makes the chocolate darker with a smoother flavor. Great for use in cakes and sandwich cookies.
