Flor De Mayo Beans are native to the Southwestern part of the United States and Mexico. The beans are oval shaped and are very plump. The name means "Flower of May" in Spanish. These beans have a light pink ue when harvested. They have a smoky flavor and a smooth texture. They pair well with chilis and Southwestern dishes such as refried beans and tamales.
