Description/Taste
Burgundy amaranth produces feathery, cone shape blooms that attach to a central stalk. Each bloom is packed with burgundy colored, edible seeds. from the central stalk which is packed with edible seeds The tender, oval shaped leaves have the same burgundy color and grow towards the base of the stalk. The leaves are slightly astringent when raw, but are nutty and mild, like spinach.
