Central Milling is an employee owned and operated grain farm and mill that has been producing artisan, organic, and heirloom flour varieties for over 150 years. Dark Rye flour is milled on a short flow roller to keep the germ and bran together during the milling process. This flour has a protein level of 10.9% with a bold whole grain flavor and smooth texture. Dark Rye flour is ideal for bread making.
