Description/Taste
Red lemons are a medium to large varietal, averaging 9 to 10 centimeters in diameter, and have a round, oval to elongated shape with a short, blunt tip on the non-stem end. The lemon’s rind is thick, textured, and semi-coarse, covered in wrinkles, sunken pores, and bumps. The peel is also green when young, ripening to yellow with an orange-red blush as it matures. This distinct red-orange blush varies in saturation and color, depending on the temperature and amount of sunlight the lemons receive and is the most unique feature of the variety. Some fruits may be entirely covered in the dark red-orange hue, while others may only display a hint of orange against a golden yellow surface. Underneath the peel, a layer of white, spongy pith encases 8 to 9 segments of flesh divided by thin membranes. The yellow-orange flesh is sometimes blushed with pink-red hues and is dense, aqueous, and generally seedless. Red lemons are aromatic and release essential oils that fill the air with a floral, fruity, and refreshing scent. The flesh is subtly sweet, acidic, tart, and sour with bright, citrusy nuances.
