Guanciale is cured pig cheek or jowl. This Italian staple has a velvety texture and robust flavor. Mitica Guanciale is sourced from Italy using pork born and bred exclusively in the Emilia Romagna and Lombardia regions. Guanciale is dry cured for three months in a mix of salt and spices.
