Red chile sauce is made from the Colorado chile pepper which gives this sauce a medium heat and dark red color. Chile peppers are native to South and Central America and there are approximately 25 different species. Red chile sauce pairs well with meats such as pork, chicken and beef. This sauce also can be used in authentic Mexican dishes such as enchiladas, chilaquiles and menudo.
