The Mung bean is high in fiber, protein, vitamins, and traditionally eaten as a bean sprout or whole with and without the skin. They have a light yellowish green color with an earthy flavor perfect for curries or soups. Sprout these organic mung beans and add to salads or sandwiches for a little bit of crunch.
