Arrowroot powder is a white, finely ground powder extracted from the Arrowroot plant. The rhizomes of the Maranta arundinacea plant are harvested a year after sowing before the plant goes dormant for the winter, and the fresh rhizome is washed, cleaned of the bitter-tasting outer skin, washed again, and then ground to a pulp. Water is added to the pulp, and the resulting paste is then passed through a very fine sieve and cloth. The remaining pulp is dried to remove all moisture, resulting in a very fine powder that is highly starchy in feel and cakes easily when scooped. Arrowroot powder is odorless with a very mild, neutral taste that disappears when added to other foods.
