Description/Taste
The Pasilla chili, is a dried form of the narrow and long chilaca pepper. When dried they are called “pasilla negro” or “chile negro” and “pasa” translates to “little black raisin” in Spanish. It has a rich chili flavor and has typically a medium to hot heat. When fully mature the pepper turns from a dark green to dark brown and is commonly found in mole sauces, with fruit or with seafood, poultry or meats.
