Description/Taste
The fruits of the fennel plant are 4 to 8 millimeters in length and are ovate and thin, with five prominent dorsal ridges extending the length of the fruit. When dried, the fruits, also known as the seeds, can be ground to create a fine, green-brown powder that easily clumps when pressure is applied. The powder has a beach sand consistency and texture that quickly dissolves on the tongue. Ground Fennel seeds have a sweet and grassy anise aroma that is mild and pleasant on the nose. The flavor contains intense, anise and licorice notes with a mild camphor finish that clears the sinuses and freshens the palate. The ground seeds also have a hint of fresh grass and undertones of sweet hay.
