Monosodium glutamate or MSG is a naturally occurring amino acid that is non-essential, produced as a sodium salt from glutamic acid. Used as a food additive it enhances the flavor of cuisine by blending and developing taste active compounds. Often added to Chinese, canned food as well as processed meats to preserve flavor.
