Millet is one of the oldest grains known to man and evidence has shown that lake dwellers in Switzerland consumed millet as far back as the Stone Age. Thought to have originated in Asia and Africa, millet was the dominant grain in China prior to rice. Millet is also known as "broom corn" and is used in many cultures to make different varieties of flat breads. The grain has a mild and sweet corn-like flavor that can be nutty if toasted, and fluffy consistency. Millet can be used to make porridge, breads, baked goods and even alcohol.
