Herbes de Provence is a mixture of dried and roughly chopped seeds and herbs that range from 2 to 10 millimeters in size, with varying shades of green. It has a jagged, coarse, and unpleasant mouthfeel when consumed raw. The combination of herbs used in Herbes de Provence can vary, but generally, the mixture has an earthy, grassy, and herbaceous aroma with hints of citrus, pepper, and anise. If the blend includes lavender, it will also have a sweet and floral fragrance on the nose. The herbal fusion has a pleasantly savory and earthy flavor with citrus, anise, and mint undertones.
