Windrose Farm is a 50-acre, family-owned farm located near Paso Robles. The farm combines vegetable crop rotation, a fruit orchard, and heritage breed livestock to create a sustainable farming model. The Spencer family has been dedicated to growing flavorful, healthy, and sustainable fruits and vegetables for over thirty years. Sorrel is classified as a herbaceous perennial and is botanically known as Rumex acetosa. Sorrel leaves have an arrow-like shape that tapers to an end and has an overall green color. These leaves offer a tender texture and with a unique lemon-like flavor. As the Sorrel matures, the leaves can become more astringent, but overall presents a light tart herbaceous taste.
