Description/Taste
White eggplant are oval-shaped and thinner near the stem end. The eggplant's skin is ivory-white in color and the flesh is less bitter than other varieties.

Applications
A smaller variety, the white eggplant may be stuffed, baked, roasted, stewed or grilled. Keep clean, dry and refrigerated until use. Cover or cook slices immediately as they will turn brown when exposed to oxygen.
