Petite® Silver Leaf Sorrel is very small in size, averaging 5-7 centimeters in length, and has broad, rounded, shield-like leaves with crisp, pale green stems. The silvery, green leaves are smooth, flat, wide and have a central, prominent dark green vein that branches into a few smaller veins across the surface. Petite® Silver Leaf Sorrel is delicate, tender, and crisp with a mild, lemony, sweet-tart flavor that is not overpowering but is balanced with soft acidity.
Petite® Silver Leaf Sorrel is available year-round.
Petite® Silver Leaf Sorrel is a tiny, edible green that is a part of a line of specialty greens grown by Fresh Origins Farm, the leading national producer of both common and unique microgreens, located in San Diego, California. Harvested approximately 14-25 days after sowing, Petite® Silver Leaf Sorrel is used by chefs as a garnish to add an unusual shape, earthy green hues, and a soft, citrus flavor into both savory and sweet dishes.
Petite® Silver Leaf Sorrel contains some vitamin C, vitamin A, iron, magnesium, fiber, manganese, and copper.
Petite® Silver Leaf Sorrel is best suited for raw applications as its tiny size and delicate nature cannot withstand high heat preparations. It is most commonly used as a garnish and can be sprinkled on top of soups, stews, salads, potato dishes such as gratins, noodle dishes, pasta, fish, and egg dishes. It can also be layered in sandwiches or placed on top of desserts such as ice cream and dark chocolate. Petite® Silver Leaf Sorrel pairs well with veal, poultry, fish, shrimp, scallops, crab, eggs, potatoes, lentils, goat cheese, mild lettuces, asparagus, celery, cucumber, rhubarb, apple, strawberries, figs, elderflower, and yogurt. It will keep 5-7 days when stored unwashed, in a sealed container, in the refrigerator.
