Micro Arugula Sylvetta™ is small in size, averaging 5-7 centimeters in length, and has slender, oval to lanceolate-shaped leaves with pale green, thin, and crunchy stems. The green leaves are smooth, delicate, and have subtly wavy edges with a central, prominent vein expanding across the surface. Micro Arugula Sylvetta™ is crisp with a complex blend of green, herbal flavors. When consumed raw, the leaves have a pronounced nutty-sweet flavor followed by a slightly salty, peppery aftertaste.
Micro Arugula Sylvetta™ is available year-round.
Micro Arugula Sylvetta™ is a tiny, edible leaf that is a part of a trademarked line of specialty greens grown by Fresh Origins Farm, the leading national producer of both common and unique microgreens, located in San Diego, California. Fresh Origins has been supplying distributors with these specialty greens for over twenty years and uses the sunny Southern California climate to produce healthy crops with bold, exceptional flavors. Harvested approximately 14-25 days after sowing, Micro Arugula Sylvetta™ is favored by chefs as a garnish to add a fresh, spicy, and peppery flavor to savory dishes and is slightly stronger in flavor compared to common arugula.
Micro Arugula Sylvetta™ is a good source of potassium, vitamin C, vitamin K, and antioxidants, which can help reduce inflammation in the body.
Micro Arugula Sylvetta™ is best suited for raw applications as its delicate nature cannot withstand high heat preparations. The leaves are most commonly used as a garnish to add a peppery flavor to culinary dishes and are tossed into green salads, pasta, fruit bowls, and grain bowls. The leaves can also be layered into sandwiches, burgers, and wraps, topped over pizza, or served with cooked eggs. In addition to utilizing whole, Micro Arugula Sylvetta™ can be blended into oils, sauces, butter, and dips, or chopped and rubbed over cooked meats for flavoring. Micro Arugula Sylvetta™ pairs well with tomatoes, plums, radishes, beets, sweet corn, almonds, lentils, cheeses such as Parmigiano Reggiano and goat, quinoa, millet, bitter greens such as radicchio and endive, balsamic vinegar, and flavored olive oils. The greens will keep 5-7 days when stored unwashed, in a sealed container, and in the refrigerator.
In the United States, micro arugulas such as Micro Arugula Sylvetta™ have widely increased in popularity since the early 2000s for their compact size and bold flavors. The nutty, peppery taste of Micro Arugula Sylvetta™ surprises consumers and the use of microgreens adds a level of sophistication to dishes with its visual and textural impact. Microgreens have also increased in popularity for their zero-waste nature, especially in the United States since food waste is a prominent topic of discussion in the culinary world. Garnishes are no longer reserved to inedible items or non-flavorful vegetables. The microgreen movement has spurred garnish innovation as chefs can now add these tiny greens to dishes to add strong flavoring, and the entire green is edible, reducing the restaurant’s waste.
Micro Arugula Sylvetta™ was created by Fresh Origins Farm in San Diego, California in the 1990s-2000s as a part of the growing microgreen trend. The microgreens are grown in greenhouses that allow for natural sunlight and continuous air circulation, which is an ideal climate for optimum growth and year-round harvest. Today Micro Arugula Sylvetta™ can be found at select distributors of Fresh Origins, such as Specialty Produce, and is available across the United States.
