Micro Arugula Sylvetta™ is small in size, averaging 5-7 centimeters in length, and has slender, oval to lanceolate-shaped leaves with pale green, thin, and crunchy stems. The green leaves are smooth, delicate, and have subtly wavy edges with a central, prominent vein expanding across the surface. Micro Arugula Sylvetta™ is crisp with a complex blend of green, herbal flavors. When consumed raw, the leaves have a pronounced nutty-sweet flavor followed by a slightly salty, peppery aftertaste.

Applications
Micro Arugula Sylvetta™ is best suited for raw applications as its delicate nature cannot withstand high heat preparations. The leaves are most commonly used as a garnish to add a peppery flavor to culinary dishes and are tossed into green salads, pasta, fruit bowls, and grain bowls. The leaves can also be layered into sandwiches, burgers, and wraps, topped over pizza, or served with cooked eggs. The greens will keep 5-7 days when stored unwashed, in a sealed container, and in the refrigerator.
