Description/Taste
The only globally mass-produced yellow banana variety today – the one that you likely picture when you hear the word “banana” – is called the Cavendish. Cavendish bananas have a thick signature-yellow peel when ripe, encasing their soft, cream-colored, semi-starchy flesh. Their flavor can vary, having hints of lemon custard to crème brûlée, as they become sweeter as they ripen. Hence, some people wait to eat them until after their yellow peel becomes flecked with brown. The banana plant itself isn’t a tree, but rather the largest herb in the world. Bananas grow in hanging clusters, called bunches, from these tall plants that can reach over 20 feet tall.

The banana is in the Musaceae, or banana family of plants, and is botanically classified as a berry. Today, the banana is considered the fourth most valuable food crop on the planet behind wheat, rice, and milk, and is often hailed as the perfect food because it is one of the world's most accessible, nutritious, convenient, affordable crops grown year-round. There were once thousands of banana varieties—pink ones, fuzzy ones, even berry-flavored ones—and although there still is some diversity in parts of the world, the Cavendish variety has been dominating the market since the 1970s. Cavendish bananas need a little human help in order to propagate, as those tiny little black specs you see inside are technically the remnants of what would be their seeds, however they are not fertile. So, cultivation is done essentially through cloning, as the only way to reproduce them is to transplant part of the plant’s stem. This explains why a Cavendish banana in Rome will look and taste exactly the same as the banana you bought in San Diego; they are genetically identical in shape, size, and flavor.
Nutritional Value
Bananas are well known for their potassium content, but they also offer a healthy boost of vitamin B, vitamin C, fiber, and magnesium. They contain three natural sources of sugar – sucrose, fructose, and glucose – and are denser in calories than most other fruits, making them an extremely efficient and sustainable source of energy.
Applications
Cavendish bananas are most commonly eaten fresh, though they can also be dried or cooked. Simply peel and enjoy, or use fresh in smoothies and atop cereal or granola. They can be baked in muffins and banana bread, or used to make ice cream, puddings, and more. They pair well with berries and other tropical fruits like pineapple, guava and mango, as well as flavors of cinnamon, nutmeg, lemon, caramel, chocolate, and vanilla. As tropical fruits, bananas don't care for the cold of a refrigerator, so store them at room temperature where they'll continue to ripen gradually.

From its humble beginnings, the banana has played a significant role in world history, economics, and politics, impacting food and financial security for more than 100 million people worldwide, and fueling the economies of entire countries, notably in Central America. It is the biggest export of Costa Rica, Ecuador, Panama, and Belize, and the second most valuable export for Colombia, Guatemala, and Honduras. Each year, over 100 billion bananas are consumed worldwide, with the United States alone eating about 3 million tons of bananas. Fun fact: the banana has had more songs written about it than any other fruit!
Geography/History
Bananas have been cultivated and used since ancient times, even pre-dating the cultivation of rice. Wild banana plants are native to south and Southeast Asia, with fossil evidence in Papua New Guinea dating back to 5000 BCE. Traders and travelers spread the wild bananas around the world, however they were not the sweet fruits with yellow peels we see today, but rather the red and green cooking varieties, now referred to as plantains. Yellow sweet bananas developed out of cross breeding two wild banana varieties, and were quick to be cultivated since they were so sweet even in their raw form. The yellow Cavendish variety was named after Duke William Cavendish, who first propagated the plant in England in 1834. It rose to fame by the end of the 20th century as one of the most resilient varieties after a disease wiped out its bigger and sweeter predecessor, the Gros Michel or “Big Mike.” Some scientists are predicting a similar demise of the Cavendish, as a new strain of the disease began to affect Asian crops in the 1990s, and could threaten the epicenter of the banana industry in Latin America should it spread there. Other scientists are busy working to genetically engineer Cavendish plants with immunity, while farmers are looking to grow genetically different bananas to perhaps replace the Cavendish clones with something more biologically diverse, and therefore more capable of slowing, or even stopping, the spread of pathogens.
