Petite® Lemon Grass™ is comprised of small, narrow, and elongated leaves, averaging 10 to 12 centimeters in length, that have a straight and angular shape. The slender leaves are smooth, flat, dark green, and pliable, showcasing a central crease dowhe center. Each leaf blade has a crisp, semi-tender, and sometimes chewy consistency. Petite® Lemon Grass™ emits a pleasant floral and tropical aroma, and the leaves have a concentrated blend of vegetal, herbal, earthy, tart, and tangy flavors mixed with light and refreshing, subtle citrus and mint nuances.

Petite® Lemon Grass™ has not been studied for its nutritional properties. In general, Lemon Grass contains some vitamin A to maintain healthy organ functioning, vitamin C to strengthen the immune system, potassium to balance fluid levels within the body, and calcium and phosphorus to protect bones and teeth. The greens also provide low amounts of zinc, folate, copper, B vitamins, iron, and magnesium.
Petite® Lemon Grass™ is best used as a bright and herbal flavoring, traditionally infused into dishes and used as a finishing element. The greens can be finely chopped and scattered over salads, mixed into stir-fries, or used to flavor salad dressin marinades, and sauces. Petite® Lemon Grass™ is popularly incorporated into curries, stews, and soups, especially Asian-inspired soups like wonton soup, pho, or tom kha. The slender leaves can be pureed with other herbs and served as an accompanimeno seafood, minced and mixed into lo mein and other noodle dishes, or folded into butter and used as a spread over fresh bread, waffles, roasted meats, sandwiches, or vegetables. Petite® Lemon Grass™ pairs well with coconut milk, Thai basil, meats such as pork, beef, and poultry, seafood including mussels, clams, fish, shrimp, and scallops, aromatics such as garlic, ginger, shallots, and chile peppers,rus, bell peppers, green beans, and cauliflower. The Petite® Greens will generally keep up to seven days when stored unwashed, dry, and in a container in the refrigerator. Lemon Grass has been cultivated in Asia since ancient times and is a medicinal, cosmetic, and culinary herb. India is the largest producer of Lemon Grass, and the country cultivates approximately 80% of the world’s supply. The elongated, narrow stalre primarily grown in Tamil Nadu, Maharashtra, Karnataka, and Kerala and are a traditional ingredient in natural practices. In Ayurvedic medicine, Lemon Grass is known as Bhutrina, translating to mean “earth grass,” and is used as a cooling, stimulating, and bitter herb. Mature stalks are commonly pressed into oil, used topically to soothe muscle pain, headaches, and increase circulation. Lemon Grass oil can also be used to calm upset stomachs and is a typical scent found in lotions, soaps, oils, and candles. Practitioners view Lemon Grass oil as a purifying ingredient to improve the clarity and mood of the body.
