Petite® Amaranth Carnival Mix™ is small in size and has obovate to oval-shaped leaves that taper to a point on the non-stem end with lightly serrated or wavy edges. The thin, delicate leaves are smooth with variegated colors of dark green, yellow, orange, maroon, and pink, and are attached to slender, flexible stems. There is also a prominent central vein that lightly branches into smaller veins across the surface of the leaf. Petite® Amaranth Carnival Mix™ is crisp and tender with a fresh green taste and mild corn flavor.

Petite® Amaranth Carnival Mix™ is a blend of four different varieties of amaranth that have a colorful assortment of yellow, pink, orange, and red hues. These Petite® Greens are a part of a trademarked line of specialty plants grown by Fresh Origins Farm in San Diego, California and are a long-lasting green created to hold its shape in both raw and cooked dishes. Designed to be slightly larger than microgreens, Petite® Amaranth Carnival Mix™ is harvested approximately 4-6 weeks after sowing and is commonly used by chefs as a garnish for its striking mix of colors, fresh flavor, and tender, crisp texture.
Petite® Amaranth Carnival Mix™ contains some antioxidants, vitamins A and C, calcium, iron, and copper.
Petite® Amaranth Carnival Mix™ greens are predominately used raw and have a mild flavor allowing them to be used in a variety of both raw and cooked dishes. The colorful greens can be utilized as a garnish to enhance the flavor and visual appeal of a dish and can be layered over cooked meats or fish, grain bowls, pasta, and vegetable dishes. They can also be mixed into salads and are hearty enough to withstand acidic dressings or be lightly coated in oils such as vanilla oil. The greens can also be incorporated into pasta and vegetable side dishes. Petite® Amaranth Carnival Mix™ pairs well with bell peppers, onions, garlic, seafood, poultry, beef, lentils, and rice. The greens will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
