Description/Taste
Micro Okra™ is very small in size, averaging 5-7 centimeters in length, and has 2-3 heart-shaped or cordate leaves that are connected to slender, thin, pink stems. The green leaves are smooth, broad, flat, and delicate with prominent veins branching across the surface. They also have very fine hairs or fibers that give the leaves a velvety, soft texture and the pink stems are juicy and crisp. When fresh, Micro Okra™ is tender and succulent with a mild, green and grassy flavor.

Micro Okra™ is a tiny, edible trademarked green that is a part of a line of specialty microgreens grown by Fresh Origins Farm, the leading national producer of both common and unique greens, located in San Diego, California. Harvested approximately 14-25 days after sowing, Micro Okra™ is used by chefs as a garnish to add unusual textures, colors, and fresh green flavors to dishes to enhance the overall dining experience.

Applications
Micro Okra™ greens are best suited for raw applications as their delicate nature cannot withstand high heat preparations. They are most commonly used as a garnish that can be sprinkled over seafood, poultry, raw fish, green salads, stir-fries, appetizers, and main dishes. They can also be used to garnish soups, stews, gumbos, and curries. Micro Okra™ pairs well with cardamom, turmeric, garlic, onion, plums, cucumbers, salsa, lemon, hackleback, rice, meats such as sausage, beef, poultry, and pork, and seafood such as ahi tuna, and smoked salmon. They will keep up to three days when stored in a sealed container in the refrigerator.
