Micro Sea Grass™ is a slender green with many thin, needle-like leaves that taper to a small point and are connected to a central stem. The dark green leaves are smooth, slightly curved, and tubular with a succulent, pliable, and delicate consistency. The leaves are also attached to a narrow, fleshy green stem, contributing to the microgreen’s crisp and tender texture. Micro Sea Grass™ has a refreshing minerality mixed with mild salinity, creating a savory, grassy, and salty taste.

Micro Sea Grass™ consists of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The delicate greens provide a refreshing, crisp, and salty flavor inspired by the ocean. Micro Sea Grass™ was specially curated to provide chefs with a unique, edible garnish that contributes clean flavors, textures, and unusual shapes to culinary dishes. Microgreens are generally harvested 1 to 2 weeks after sowing and are gathered at the peak of their growth cycle to ensure optimum flavor and nutritional properties. Micro Sea Grass™ adds visual depth with its textured, needle-like greens and can be individually placed on dishes or gently piled for greater impact. The microgreens elevate the dining experience by adding a savory, subtle salinity without overpowering the dish's main elements. In addition to being featured as a microgreen, Micro Sea Grass™ is also offered as a Petite® Green, a slightly larger, more mature version of the microgreen.

Micro Sea Grass™ is a source of iodine, a mineral used to regulate the metabolism and develop thyroid hormones. The greens also contain vitamin C to strengthen the immune system, vitamin A to improve skin complexion, and vitamin B to boost energy levels and develop red blood cells. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Micro Sea Grass™ is best suited as an edible garnish and provides added textural, visual, and flavorful elements to a wide variety of culinary dishes. The tender, salty greens are showcased when consumed fresh and should be added at the end of preparations to avoid wilting. Micro Sea Grass™ can be floated on soups, mixed into seaweed salads, combined with cucumber as a fresh side dish, used as a bed of greens, or placed as an accent on seafood pasta. Micro Sea Grass™ can also be utilized as a garnish to sushi and seafood, complementing flavors of fish with rich oil content, or incorporated into tartars, other Asian cuisines, and California coastal cuisine. The refreshing, crisp greens can also be mixed into stir-fries, incorporated into fresh spring rolls, or used to accompany grassy vegetables for an unusual flavor combination. Micro Sea Grass™ pairs well with fruits such as mango, quince, and pear, celery, radish, ramps, cucumber, seafood such as squid, sea bass, ahi, and salmon, shellfish such as lobster, scallops, oysters, and mussels, herbs including cilantro, parsley, chives, and basil, and bright vinaigrettes. Micro Sea Grass™ will generally keep 5 to 7 days stored in the refrigerator in a sealed container.
