Description/Taste
White button mushrooms are small to medium in size with caps averaging 2-7 centimeters in diameter and are attached to short, truncated stems. The smooth white caps are rounded, firm, and spongy. When bruised, the white flesh will turn light pink and will then transform into brown. Underneath the unopened caps, there are many small, light brown gills that are hidden with a white veil and these gills produce dark brown spores. The short white stem is also edible, dense, thick, and smooth. When raw, White button mushrooms are mild with a crisp texture, and when cooked, they develop an earthy flavor with a tender, chewy texture.

White button mushrooms, botanically classified as Agaricus bisporus, are one of the most cultivated varieties in the world and are a widely used member of the Agaricaceae family. Also known as Table mushrooms, Common mushrooms, Champignon de Paris, and Cultivated mushrooms, White button mushrooms are a slightly different strain closely related to the cremini mushroom and the large portobello mushroom, with the only difference being predominately age and color. White button mushrooms are the youngest, followed by the cremini, and then the mature version being the portobello. White button mushrooms are commonly found in fields and grasslands all over the world, but they are also highly cultivated and varieties within the Agaricus bisporus account for about ninety percent of the mushrooms cultivated in the United States. White button mushrooms are favored by chefs and home cooks for their mild taste and versatility in a variety of culinary dishes.

White button mushrooms contain some antioxidants, potassium, selenium, amino acids, vitamin D, riboflavin, phosphorus, zinc, folate, and manganese.
Applications
White button mushrooms are best suited for both raw and cooked applications such as baking, roasting, sautéing, grilling, or stewing. They can also be used as a substitute in recipes that call for cremini mushrooms. White button mushrooms can be sliced raw and mixed into green and grain salads or sliced and served with dips. When cooked, they can be grilled on skewers, stuffed with crab, cheese, or other meats as a bite-sized appetizer, added into sauces, gravies, stir-fries, soups, stews, baked into tarts, or sliced as a topping on pizza. They can also be cooked with artichokes, chopped into ceviche, or baked into mushroom bread. White button mushrooms pair well with tomatoes, carrots, celery, potatoes, jalapenos, garlic, shallots, onion, ginger, fennel, kimchi, lime, sage, parsley, basil, meats such as beef, pork, or poultry, eggs, soy sauce, balsamic vinegar, marinara sauce, cream sauce, white wine, rice, orzo, mozzarella, parmesan, and pecorino romano cheese. They will keep up to a week when stored loosely in a paper bag or stored in a bowl covered with moist paper towels to prolong freshness in the refrigerator.
Ethnic/Cultural Info
Varieties of Agaricus bisporus have grown wild since prehistoric times and have had many varying uses and symbolism in cultures across the world. In Egypt, they were revered for the belief of giving the consumer special powers or eternal life. In France, White button mushrooms were cultivated in the catacombs beneath Paris leading to the moniker “Champignons de Paris" or Paris mushrooms, and White button mushrooms are still cultivated underground in Western France today. In addition to cultural folklore, the mushrooms were used in traditional Chinese medicine to help regulate the body’s energy and to provide additional antioxidants to promote overall health and well-being.
Geography/History
White button mushrooms have been growing since ancient times and were first believed to have been cultivated in France by French botanist Joseph Pitton de Tournefort in 1707. Cultivation spread and the White button mushroom was produced in the United States at the turn of the 20th century in Pennsylvania where mushrooms were grown in abandoned coal mines. Today White button mushrooms are primarily cultivated and are widely available at supermarkets, farmers markets, and specialty grocers in North America, South America, Europe, Asia, Africa, and Australia.
