Description/Taste
Micro Asian Mix™ consists of small leaves connected to slender stems, and the leaves range in shape from thin and elongated, flat and oval, to broad and heart-shaped with smooth or serrated edges. The leaves also vary in color from dark green, purple, to a variegated mix of both hues, and depending on the green, there may be light veining found across the surface. Micro Asian Mix™ has a soft, crisp, succulent, and tender consistency. Within the mix, each microgreen has a distinct flavor, including notes of grass, citrus, and pepper, but in combination, the mix provides a savory blend of subtly sweet, tangy, pungent, and earthy flavors.
Seasons/Availability
Micro Asian Mix™ is available year-round.
Current Facts
Micro Asian Mix™ is a blend of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The herbaceous mix is a concentrated blend of classic Asian herbs and was specially curated to provide chefs with a unique, edible garnish. Fresh Origins has developed over thirty microgreen mixes, and Micro Asian Mix™ incorporates microgreens such as radish, tatsoi, mustard, cilantro, and other greens to create a peppery, vegetal, and fresh profile. The microgreens are generally harvested 1 to 2 weeks after sowing, and chefs use the herbs to build complexity, texture, and flavor within dishes. Micro Asian Mix™ also adds visual depth with its multi-colored, expressive appearance and can be individually placed on small plates or sprinkled across larger preparations for greater impact. In addition to microgreens, Micro Asian Mix™ is found as a Petite® Asian Mix™, which is a slightly larger, more mature version of the microgreen mix.
Nutritional Value
Micro Asian Mix™ provides multiple vitamins and minerals due to its mixture of herbs with unique nutritional properties. The greens are a source of fiber, magnesium, calcium, potassium, iron, and phosphorus, and they also contain some vitamins A and C, which are antioxidants that have been shown to help strengthen the immune system. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Asian Mix™ is best suited as an edible garnish. The tender, crisp greens are showcased when consumed fresh, and the leaves should be added at the end of preparations to avoid wilting. Micro Asian Mix™ can be tossed into green salads, used as a garnish over sushi and nigiri, or floated on noodle soups such as pho, udon, or ramen. The greens can also be sprinkled over rice and noodle-based dishes, tossed into stir-fries, or layered in sandwiches. Micro Asian Mix™ complements flavors commonly found in Asian cuisine and can be used as a garnish for seafood, chicken, beef, pork, and vegetarian dishes. The microgreens are also used in Asian fusion, American, Italian, and California coastal cuisine as a twist on classic flavors. Micro Asian Mix™ pairs well seaweed, aromatics such as green onions, lemongrass, garlic, and shallots, edamame, pine nuts, quinoa, mushrooms, carrots, radish, and cauliflower. Micro Asian Mix™ will generally keep 5 to 7 days stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Micro Asian Mix™ is a modern garnish used on ramen in the United States. The Japanese noodle soup was created from a blend of Chinese and Japanese ingredients, especially the Chinese wheat noodle, and the flavor fusion was rumored to have been developed by a Chinese chef living in Japan sometime during the 19th century. There are many different ramen variations found regionally in Japan with varying soup bases, toppings, and flavors, but the noodles are made with kansui, alkaline water that provides a unique, chewy texture. The noodles are also created to be completely covered in the soup broth, providing flavor with every bite. After World War II, the savory noodle soup widely increased in popularity and was brought to the United States in the 20th century. Since its introduction, chefs are elevating ramen with gourmet toppings such as microgreens. Micro Asian Mix™ provides a concentrated blend of bright, peppery, herbal, and savory tastes to complement rich soup broth, and the mix is easily added to the soup, providing increased visual appeal, texture, and flavor in a short amount of time.
