Description/Taste
Micro Southwest Mix™ is comprised of small microgreens that range in shape from lanceolate and tapered, flat and oval, cordate and curved, to serrated and frilly. The microgreens average 5 to 7 centimeters in height and traditionally bear a soft, crisp, succulent, and tender consistency. The leaves are also smooth, pliable, and delicate, varying in color from dark green, bright green, purple-green to a deep red, burgundy hue. Within the mix, each microgreen has a distinct flavor, including notes of cilantro, onion, oregano, epazote, red amaranth, and others, but in combination, the mix provides a zesty blend of earthy, pungent, peppery, and vegetal flavors with a clean, herbal finish.

Fresh Origins produces over thirty unique microgreen mixes, and the tiny greens are available year-round for chefs to express their creativity through fresh, natural, and edible greens. Micro Southwest Mix™ captures the essence and flavor of the rugged and flavorful American southwest in a fresh, modern way. The mix incorporates microgreens with earthy, peppery, savory, and vegetal flavors to develop a dynamic combination that can be easily added as an edible garnish to any Latin, Hispanic, Tex-Mex, Sonoran, Southwestern, or Fusion dish. Chefs typically place the microgreens individually on small plates as a procured decoration, or they scatter a handful of the greens across larger preparations for added flavor, color, and textural layers.
Nutritional Value
Micro Southwest Mix™ has not been studied for its nutritional properties, but like other microgreens, the mix is a source of vitamins A and C to strengthen the immune system, vitamin K to promote faster wound healing, potassium to balance fluid levels, and calcium to protect bones and teeth. The microgreens also provide fiber to regulate the digestive tract, copper to promote healthy metabolism, magnesium to maintain optimal nerve functioning, and other amounts of zinc and iron. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Southwest Mix™ is best used fresh as an edible garnish to showcase the mix’s diverse flavors and delicate, vegetal crunch. The microgreens provide increased textural and visual appeal and are traditionally added at the end of cooking as a finishing element to prevent the leaves from wilting. Micro Southwest Mix™ can be sprinkled fresh over guacamole, salsa, and dips, or it can be used as a topping for tacos, burritos, enchiladas, and tamales. The microgreens also complement the rich flavors found in roasted meats, rice-based dishes, and beans, or they can be sprinkled over soups, chilis, stews, and salads. Micro Southwest Mix™ pairs well with meats such as poultry, pork, and beef, pinto beans, black beans, cheeses including queso blanco, queso fresco, cheddar, and Monterey jack, aromatics such as garlic and onions, corn, squash, peppers, nopales, and potatoes. Whole, unwashed microgreens will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.
