Elephant garlic scapes are long, smooth, solid green flowering stalks of the elephant garlic plant. Elephant garlic scapes can reach up to 2 meters at full maturity but is best harvested at around .5-1 meter when it is most tender. Each stalk is topped with a flowering head also known as the spathe. Depending upon maturity of the scape, the spathe can be thin and petite or bulbous and split open. Scapes release a pungent oil and robust peppery flavor when pressed. Its flavor is similar to that of green garlic but slightly milder with grassy and nutty undertones.
Elephant garlic scapes are available in the late spring and early summer months.
