Micro Mirepoix Mix™ consists of very small leaves connected to thin, delicate stems. The mix is comprised of leaves of varying shapes and sizes, measuring approximately 3 to 4 centimeters in length. The leaves range in appearance from elongated and smooth with bright green and dark purple hues to frilled, feathery leaves to triple leaflets with toothed edges. The microgreen mix has a delicate, crisp, and succulent consistency. Micro Mirepoix Mix™ has an herbal, earthy, and vegetal flavor with savory, sweet, and bitter notes.

Micro Mirepoix Mix™ is a blend of young, edible seedlings that are part of a trademarked line of specialty microgreens grown by Fresh Origins farm in San Diego, California. The sweet and savory mix of greens combines micro carrot, micro celery, and micro onion. This traditional French combination of aromatic and root vegetables, known as Mirepoix, forms the flavor base for many soup and sauce recipes. The rich and savory flavor of onion mixes with the sweetness of the carrot and herbaceous qualities of the celery, balancing acidity. Fresh Origins combined the fresh and brightly flavored microgreens of these rudimentary vegetables, creating a unique and flavorful blend that chefs can use as an accent in a variety of savory dishes. The mix of leaves can be used together to showcase their balanced flavor nuances, or individual leaves can be selected and placed throughout a plated dish to complement flavors and increase the dish's visual appeal and textural qualities. Micro Mirepoix Mix™ is generally harvested 1 to 2 weeks after sowing to ensure the plants’ optimal freshness and flavor.

Micro Mirepoix Mix™ provides a variety of vitamins and minerals due to its mixture of greens with unique nutritional properties. Generally, microgreens have concentrated nutrient content compared to their mature counterparts. Micro Mirepoix Mix™ contains high levels of vitamin A, a nutrient that supports the immune system, vision, and cell reproduction, vitamin K to assist with faster wound healing, and vitamin B to support one’s metabolism. The micro blend also contains a variety of minerals, including potassium, iron, and magnesium.
Applications
Micro Mirepoix Mix™ is best used as an edible garnish as the delicate greens cannot withstand high heat. The blend should be added at the end of the cooking process to prevent the leaves from wilting and losing their flavor and volume. Micro Mirepoix Mix™ can be floated atop creamy soups, curries, and braises, tossed into leafy salads, or added to pasta and grain dishes. The greens make a delicious addition to spring rolls, sandwiches, and wraps and can be sprinkled over pizza at the end of baking to add dimension and flavor. Micro Mirepoix Mix™ can be used to garnish roasted chicken, grilled fish, and browned mushrooms, or it can be added as a garnish to baked goods and desserts, bringing a sweet, earthy, and herbaceous twist to ice creams, custards, and cakes. Micro Mirepoix Mix™ can be infused into syrups or muddled into sparkling beverages, cocktails, frozen drinks, or lemonades for added flavor. This classic combination pairs well with variety of vegetables including tomatoes, garlic, onions, leafy greens, carrots and other root vegetables, and members of the Brassicaceae family including broccoli, kohlrabi, and cauliflower. The farm uses the mild Southern California climate to produce flavorful and robust microgreens year-round. They also partner with chefs to create innovative and unique flavorings through breed selection and propriety mixes. The farm adheres to the California Leafy Green Marketing Agreement, a set of strict food safety practices created by food safety experts and maintained through government audits. Their products are also tested through PrimusLabs for safety and quality.
