Baby Gold beets are small root vegetables that grow partially underground. Their rounded roots are about the size of a golf ball and have slender, tapered ends. Opposite these ends, the roots are connected to long leafy green stems. The roots are considered the primary edible portion of Baby Gold beets. Their skin features a predominantly orange hue that's occasionally marked by faint horizontal striations of golden-yellow. This skin has a slightly rough texture due to the small hairs protruding from the roots. Baby Gold beet flesh has a bright yellow-gold color and a dense, aqueous, and grainy texture. These root vegetables are crunchy when raw and develop a tender and smooth consistency with a very mild, sweet, and earthy flavor when cooked.
