Description/Taste
Baby Green Romaine hearts are small, elongated tight heads of Romaine picked at an younger stage of growth. The hearts are lighter in color, ranging from pale lime green to translucent ivory, crisp yet tender with a more rounded shape than their mature counterparts. The outer leaves of each romaine head are removed, leaving the hearts intact. Notably, Baby Green Romaine hearts are far more valued for their texture than their near invisible flavor.

Romaine lettuce AKA Cos, botanical name, Lactuca sativa is an annual plant of the aster or sunflower family Asteraceae. Lettuce is categorized into six different edible forms, also known as subspecies or botanical varieties. The six types of lettuce are Crisphead (Iceberg and Batavian), Romaine, Butter, Leaf, Latin and Stem. All lettuce types except for Iceberg occur in red and grean leaf form. The word lettuce itself comes from the Latin lactuca, which is derived from lactus, meaning “milk”. The milk in this sense refers to the milky substance that appears when lettuce leaves are torn or cut from the plant. Although this does not happen with all lettuce types, it is very typical of romaine lettuces.
Applications
Baby Green Romaine hearts can be used as a substitute for common Romaine and other crisp lettuce varieties. They can be used as a vessel for dips and other accoutrements, as a sandwich lettuce and they can also be grilled to serve as an appetizer. Complimentary pairings are endless, especially as the hearts serve as a blank canvas for accompanying flavors, bold, bright and rich. Notably favorable ingredient pairings include bacon, anchovies, nutty aged cheeses, chiles, creamy dressings, aged balsamic, citrus, pomegranates, melons, avocado, pears, apples, basil, dill, tarragon, mint and nuts such as hazelnuts, pistachios and pine nuts.
Geography/History
Romaine lettuce is believed to have originated on the Aegean Island of Cos. Baby Green Romain hearts evolved out of marketing campaigns of the late 20th century promoting petite vegetables as a direct ploy to please consumers' visual palate fatigue. Romain lettuce a cool season crop, as are most lettuce varieties. It grows best in fertile soil with minimal to sufficient irrigation, warm days and cool nights. It is a great home gardner's lettuce and it can be planted in containers and raised beds. Baby Green Romain hearts can be harvested once small heads form.
