Micro Red Cabbage is very small in size, averaging 5-7 centimeters in length, and has broad, flat, and heart-shaped leaves attached to thin, pliable stems. The dark green leaves are smooth and have even, rounded edges that are lined with a deep purple hue. There are also dark purple, central veins that connect to the royal purple stem. Micro Red Cabbage is crisp and tender with a fresh, green, and earthy, peppery flavor.

Micro Red Cabbage is available year-round.
Current Facts
Micro Red Cabbage greens are tiny edible plants that are harvested approximately 14-25 days after sowing and are a specialty microgreen grown by Fresh Origins Farm, the leading national producer of both common and unique microgreens, located in San Diego, California. Micro Red Cabbage is used as a garnish by chefs for its tender texture, earthy flavor, and unique leaf shape with brilliant purple stems.
Nutritional Value
Micro Red Cabbage contains vitamin C and K, potassium, beta-carotene, calcium, magnesium, and antioxidants.
Applications
Micro Red Cabbage greens are best suited for raw applications as their delicate nature cannot withstand high heat preparations and heavy dressings. They should be added as a finishing element to dishes and can be sprinkled over soups, salads, stews, grilled vegetables, and meat dishes. Micro Red Cabbage pairs well with citrus, nuts, garlic, shelling beans, mushrooms, ginger, fennel, shallots, apples, avocados, farro, quinoa, meats such as chicken, beef, and sausage, eggs, cheeses, and light-bodied vinegar. They will keep 5-7 days when stored unwashed, in a sealed container, and in the refrigerator.
Ethnic/Cultural Info
When microgreens were first created and introduced in the 1990s, they were largely used by chefs at high-end restaurants to incorporate an artistic element into the presentation of their dishes. Today microgreens are used across the world by chefs to enhance dishes, and garnishes are no longer an afterthought on a plate but are becoming just as important to feed the artistic, visual nature of culinary preparations. Micro Red Cabbage is used by chefs to create an elevated dining experience utilizing the texture, peppery flavor, and unique shape of the leaves.
