Description/Taste
Petite® Sea Fennel™ is small in size and has three-lobed leaves that grow in clusters of two to three on thin, green stems. The flat, fleshy leaves are smooth and velvety with a dusty white coating covering the surface, and each lobe tapers to a small point. There is also faint green veining spanning across the lobes of the leaf. The green stems are thin, pliable, and crisp. Petite® Sea Fennel™ is delicate and crunchy with a mild, salty flavor with hints of anise and ginger.

Petite® Sea Fennel™ is a part of a trademarked line of specialty greens grown by Fresh Origins Farm in San Diego, California. Petite® Greens are grown to be slightly larger than microgreens but are still harvested young, approximately 4-6 weeks after sowing. Crisp, succulent Petite® Sea Fennel™ is most commonly used as a garnish by chefs to add texture, flavor, and fresh briny notes to seafood-based main dishes, salads, and appetizers.

Applications
Petite® Sea Fennel™ greens are best suited for raw applications as the crunchy texture, and salty flavor cannot withstand high heat preparations. The briny flavor of Petite® Sea Fennel™ compliments seafood of all kinds, especially shellfish, and is commonly used as a garnish. Petite® Sea Fennel™ can also be mixed into cream-based pasta, sprinkled in leafy green salads, torn and blended into salsa verde, and placed as a light garnish in cocktails such as the gin and tonic. Petite® Sea Fennel™ pairs well with halibut, trout, salmon, crab, oysters, octopus, squid, clams, prosciutto, peas, cucumber, parsley, pesto, lemon juice, gnocchi, aged hard cheeses, and cream-based sauces. They will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
