Micro Caraway is comprised of small and slender, wispy leaves attached to narrow stems. Each leaf has a frilly, deeply divided, and feathery, fern-like appearance, and there may also be a few elongated, flat, and oblong leaves found within the package. The bright to dark green leaves are smooth, pliable, and delicate, and the stems have a crisp and refreshing, succulent, and tender consistency. Micro Caraway provides concentrated herbal, earthy, and vegetal flavors with mild parsley, pepper, and citrus-like nuances.
Micro Caraway is available year-round.
Micro Caraway consists of young, edible seedlings that are a part of a line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The tender, crisp leaves are an innovative creation developed for chefs to reimagine the way caraway is traditionally used in culinary preparations. Caraway is an ancient herb native to Europe and Asia, belonging to the Apiaceae family. Throughout history, the herb was used mainly for its edible dried fruits, known as caraway seeds, contributing earthy, licorice-forward flavors to culinary preparations and medicinal, holistic practices. In the modern-day, Caraway seeds are sold worldwide, but the leaves are a secondary culinary ingredient not commonly seen in commercial markets. Caraway leaves were used among foragers and herbalists who typically cultivated the plant, treasuring the feathery leave’s delicate flavor and texture. Micro Caraway offers a milder, softer taste to the pungent notes of caraway seeds, and chefs utilize the microgreens to add familiar flavors into a dish in an unexpected, modern way. Micro Caraway can be placed individually on small plates as a procured garnish, or a handful of the microgreens can be quickly sprinkled across larger preparations for added flavor and textural layers.
Micro Caraway has not been studied for its nutritional properties, but like other herbs, the greens may contain some copper, iron, and zinc. The microgreens may also contain vitamin C to strengthen the immune system while reducing inflammation and lower amounts of vitamins E and K. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Micro Caraway is best used fresh as an edible garnish to showcase the green’s earthy and vegetal flavor. The microgreens provide increased textural and visual appeal and are added at the end of cooking as a finishing element to prevent the leaves from wilting. Micro Caraway can be sprinkled over roasted meats and vegetables, floated on soups, stews, and curries, used as a garnish for entrees, or piled on top of roasted potatoes. The microgreens can also be incorporated into green and fruit salads or blended into dips, soft cheeses, and butter. In addition to fresh preparations, Micro Caraway can be steeped into a tea, blended into smoothies, or infused into alcohol to add a mild licorice flavor. Micro Caraway pairs well with meats such as beef, pork, sausage, and poultry, potatoes, cucumbers, cabbage, tomatoes, garlic, herbs, including coriander, thyme, mint, and parsley, sour cream, citrus, peaches, and apples. Micro Caraway will keep 5 to 7 days stored in its original clamshell container in the refrigerator.
Historically, caraway seeds were the most used portion of the plant in Europe in the Middle Ages, but the roots, stems, and leaves are also edible, incorporated into medicinal and culinary applications. The aromatic seeds have been the source of many whimsical myths and legends throughout European civilizations, with many believing that caraway seeds can protect against theft. Legend has it if caraway seeds were left near possessions or sprinkled inside of homes, they would protect the items from being stolen and from thieves breaking into houses. Over time, the story evolved through oral tradition and began to include protection over love, eventually leading the seeds to be incorporated into love potions. Caraway seed-filled love potions were thought to keep significant others from wandering away from their relationships.
