Description/Taste
Micro Rapini™ is comprised of 1 to 2 small heart-shaped leaves attached to a narrow stem. Each leaf has a broad and flat appearance with rounded, curved edges. The green leaves are also smooth and pliable, sometimes featuring a prominent vein line down the leaf’s center. Micro Rapini™ has a crisp, succulent mouthfeel with a tender consistency, and the stems also provide added texture with their lightly crunchy, slender nature. Micro Rapini™ is consumed fresh and contains concentrated herbal, earthy, and vegetal flavors with mild, peppery, nutty, and slightly bitter nuances.

Micro Rapini™ consists of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The tender, crisp leaves are an innovative, proprietary creation developed for chefs to reimagine the way rapini is traditionally used in culinary preparations. Micro Rapini™ offers a milder, softer flavor to the pungent notes of mature rapini, belonging to the Brassicaceae or mustard family. Traditionally, rapini is a sharp-tasting green consisting of stalks, leaves, and buds and is utilized by chefs for its robust, earthy flavor. Micro Rapini™ is a modern, elevated version of rapini, providing similar flavor nuances without the overpowering bitterness. Microgreens encourage chefs to use edible garnishes that contribute flavor and texture to build layers within a dish. Micro Rapini™ can be placed individually on small plates as a procured garnish, or a handful of the microgreens can be quickly sprinkled across larger preparations for added flavor and textural layers.
Nutritional Value
Micro Rapini™ is a source of vitamins A and C to strengthen the immune system, boost collagen production, and reduce inflammation. The peppery greens also provide vitamin K to assist in faster wound healing, fiber to stimulate the digestive tract, potassium to balance fluid levels in the body, and other minerals, including iron, calcium, and folate. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Rapini™ is best used fresh as an edible garnish to showcase the green’s earthy flavor. Historically, rapini has been a favored ingredient in Italian, Portuguese, and Chinese cooking and is favored by chefs for its sharp, vegetal, and bitter flavor profile. The microgreens provide increased textural and visual appeal and are added at the end of cooking as a finishing element to prevent the leaves from wilting. Micro Rapini™ can be sprinkled over roasted meats and vegetables, floated on soups, stews, and curries, used as a topping on pizza, or stirred into pasta. The microgreens can also be layered into hearty sandwiches, incorporated into salads, piled over polenta, or blended into pesto, dips, and spreads. Micro Rapini™ has a nutty and peppery taste that complements acidic, sweet, fatty, and salty foods. The microgreens also pair well with tomatoes, potatoes, eggplant, and sweet peppers, meats such as poultry, beef, pork, and veal, seafood, cheeses including parmesan, mozzarella, and pecorino, and other herbs such as basil, oregano, or parsley. Micro Rapini™ will keep 5 to 7 days when stored in its original clamshell container in the refrigerator.
Ethnic/Cultural Info
Rapini is a fairly new addition to commercial markets in the United States, introduced in the mid to late 20th century. The Italian heritage vegetable has been a favorite green in Europe for centuries, but the seeds were first sent from Italy to Stefano and Andrea D’Arrigo, known as the D’Arrigo Brothers, in Boston, Massachusetts in the early to mid-20th century. The D’Arrigo Brothers expanded their operations outside of Boston and eventually purchased land in California to plant broccoli, another vegetable native to the Mediterranean. As broccoli increased in popularity due to growing consumer demand, the D’Arrigo Brothers also developed refrigerated train containers to ship fresh produce across the United States, revolutionizing the American produce industry. In the mid-1900s, the D’Arrigo Brothers began growing rapini in California in hopes of bringing another successful Italian vegetable to American households. Rapini did not see commercial success until the 1960s and was later registered under the name broccoli rabe in 1964. In the present-day, the D’Arrigo Brothers are still one of the primary suppliers of broccoli rabe in the United States. California grows over ninety percent of the broccoli rabe sold throughout the country and is cultivated seasonally between Monterey County and the Imperial Valley. Broccoli rabe is also the D’Arrigo Brothers company mascot, frequently featured at conventions, special events, and tradeshows.
