Description/Taste
Micro Sea Beans™ are small in size, averaging 5-7 centimeters in length, and are fleshy and succulent stems that are connected by many tiny joints. The stems are long, slender, fairly straight and are dark green, smooth, and are divided into many small segments. Micro Sea Beans™ are juicy, crisp, and crunchy with a mild, salty, and briny flavor with an aftertaste similar to the taste of asparagus and green beans.

Despite its name, Micro Sea Beans™ are not beans but are delicate fleshy stems that are commonly used by chefs as a salty and crunchy garnish for seafood.

Applications
Micro Sea Beans™ are best suited for raw applications as their delicate nature cannot withstand high heat preparations. They are most commonly used as a garnish, piled over seafood, poultry, and other meat dishes. Micro Sea Beans™ will add a salty crunch to any dish, so care should be taken not to add additional salt until tasted with the greens. They can also be added to omelets, stir-fries, noodles, soups, and salads. Micro Sea Beans™ pair well with fats such as butter, aioli, olive oil, and mayonnaise, tempura, seafood such as salmon, crab, mussels, clams, and lobster, potatoes, soba noodles, and acids such as vinegar or lemon juice. They will keep 5-7 days when stored unwashed, in a sealed container, and in the refrigerator.
