Description/Taste
Petite® Sorrel Meadow Red™ is small in size, averaging 5-10 centimeters in length, and has oval, spade, to heart-shaped leaves that are attached to slender, thin stems. The delicate, flexible leaves are smooth with even edges and bear a mixture of dark green hues with splashes of purple, magenta, and maroon. There are also small, dark green veins that branch across the surface of the leaf giving the leaf a variegated, dusty appearance. Petite® Sorrel Meadow Red™ is crisp and tender with a tart, bright flavor, and a fresh green taste.

Fresh Origins uses the sunny Southern California climate to produce healthy crops with bold, exceptional flavors, and the Petite® Greens are grown in greenhouses that allow for natural sunlight and continuous air circulation, which is an ideal environment for optimum growth and year-round harvest. Designed to be slightly larger than microgreens, Petite® Sorrel Meadow Red™ is harvested approximately 4-6 weeks after sowing and is commonly used by chefs as a garnish for its tart, tangy taste, and tender, crisp texture.

Applications
Petite® Sorrel Meadow Red™ greens are best suited for raw applications as their tender and delicate nature cannot withstand prolonged periods of high heat. They are most commonly utilized as a garnish to enhance flavor and visual appeal of a dish and are popularly used to complement seafood such as swordfish, salmon, sea bass, ahi tuna, scallops, prawns, and clams. Petite® Sorrel Meadow Red™ is also sprinkled over soups or pureed into the broth to add a light tangy flavor, garnished over curries, folded into yogurt dressings, blended into pesto, or mixed into green salads. Petite® Sorrel Meadow Red™ pairs well with spinach, leeks, chard, cucumbers, asparagus, Brussel sprouts, butternut squash, mushrooms, shallots, nuts such as Marcona almonds, peanuts, and pine nuts, creamy cheeses such as goat cheese and chevre, plums, lentils, meats such as beef cheek and duck, wasabi, and honey. The greens will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
