Description/Taste
Petite® Spinach Lilac™ is small in size, averaging 5-10 centimeters in length, and has obovate to oval-shaped leaves that taper to a point on the non-stem end with lightly serrated edges. The thin, delicate leaves are smooth and dark green with splashes of bright fuschia and lilac and are attached to slender, flexible stems. There are also small, dark pink veins that branch across the surface of the leaf. Petite® Spinach Lilac™ is crisp and tender with a mild spinach flavor and a fresh green taste.

Designed to be slightly larger than microgreens, Petite® Spinach Lilac™ is harvested approximately 4-6 weeks after sowing and is commonly used by chefs as a garnish for its striking mix of lilac-pink tones, fresh flavor, and tender, crisp texture.

Applications
Petite® Spinach Lilac™ greens are best suited for raw applications as their tender and delicate nature cannot withstand prolonged periods of high heat. They are most commonly utilized as a garnish to enhance the flavor and visual appeal of a dish and have been incorporated into sliders, tossed into fresh green or fruit salads, mixed into soups, layered in sandwiches, and used as a bed of greens for cooked seafood. The greens can also be mixed into pasta and vegetable side dishes. Petite® Spinach Lilac™ pairs well with apples, figs, grapes, melons, pears, berries, avocadoes, citrus, tomatoes, asparagus, green beans, broccoli, cauliflower, squash, garlic, leeks, potatoes, meats such as poultry, steak, lamb, and fish, shrimp, feta cheese, and nuts such as pecans, walnuts, and pine nuts. The greens will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
