Baby Red cabbages can range in size from a slightly large Brussels sprout to a small fist size. Vibrant in color with deep purple leaves and a bright white core. Baby Red cabbages are slightly sweeter in flavor than their larger, more mature counterparts. Although, Red cabbage tends to have a more bold, cruciferous and peppery flavor versus Green cabbage, which is also due to the anthocyanin pigments. When choosing baby Red cabbages look for tightly packed, crisp leaves.

Red cabbage, botanical name Brassica oleracea or B. oleracea var. capitata F. rubra, is a variant of white hard-heading cabbage and a descendant of three distinct cabbage types within the Brassica family. The word "cabbage" is a form of the French word 'caboche' meaning "head." Red cabbage's coloring is due the presence of anthocyanins.
