Petite® Lucky Shamrock Mix™ has a sweet and earthy aroma with vanilla nuances and an earthy and vegetal flavor with a bitter finish.
Petite® Lucky Shamrock Mix™ is available year-round.
Petite® Lucky Shamrock Mix™ is a part of a boutique line of specialty greens developed by Fresh Origins Farm, a sustainably focused operation in southern California. Petite® Greens are more mature than microgreens but are harvested before they have fully developed, gathered approximately 4 to 6 weeks after sowing, resulting in small, tender leaves with full flavor. Fresh Origins currently grows over 125 varieties of Petite® Greens with chefs in mind. Petite® Lucky Shamrock Mix™ is derived from mixtures of wild clover, a perennial species in the pea family. Clover sprouts naturally in three leaflets, but they can also mutate into leaflets of four, which are considered lucky. Clover is entirely edible and is often used as livestock feed and to produce clover honey. The shamrock is also the symbol of the St. Patrick’s Day holiday, and the stunning appearance and delicate texture of Petite® Lucky Shamrock Mix™ is a popular garnishing choice during the holiday’s celebration.
Petite® Lucky Shamrock Mix™ is a rich source of calcium and phosphorus, two minerals that help to build strong bones. The greens also contain bioflavonoids, antioxidants that help support blood circulation and reduce inflammation, as well as vitamin C to strengthen the immune system and a variety of B vitamins.
Petite® Lucky Shamrock Mix™ is best suited as an edible garnish, showcasing the unique shape and appearance of the tender greens. The greens can be lightly dressed and served in salads, used to top roasted meats and vegetables, or served atop pureed soups. Petite® Lucky Shamrock Mix™ makes the perfect garnish for cocktails and desserts, especially during St. Patrick’s Day. The greens pair well with spring and summer vegetables like tomatoes, asparagus, peas, and green beans, cheeses like burrata, mozzarella, goat, and asiago, and meats including cured pork, chicken, and fish. Petite® Greens will generally keep up to seven days when stored unwashed, dry, and in a container in the refrigerator. It is recommended to use Petite® Lucky Shamrock Mix™ immediately for the best quality and flavor.
The shamrock, whose name is derived from the Gaelic word “seamrog,” meaning “little clover,” is the symbol of St. Patrick’s Day, an Irish Catholic holiday. Legend says that when Saint Patrick arrived in Ireland, he used a three-leaf white clover to explain the Christian concept of the Holy Trinity, with the three leaves representing the Father, Son, and Holy Spirit. A traditional shamrock has only three leaves, but four-leaf clovers grew to symbolize luck over time. Four-leaf clovers are an anomaly that only occurs once in every ten thousand leaf sets, and plants that produce a leaflet of four are more likely to sprout more four-leaf clovers. This has allowed commercial cultivators to select plants that are more likely to mutate. St. Patrick’s Day, also referred to as St. Patty’s Day, has become a popular celebration in Europe and the United States with “shamrock” themed entrees, desserts, and cocktails showing up on menus throughout February and March. With the increasing popularity of the holiday, products like Petite® Lucky Shamrock Mix™ are in high demand for their festive appearance during these celebrations.
White Clover is native to Europe and western Asia, where it has been used as a pasture crop for thousands of years. The plant was introduced to the Americas roughly 300 years ago, where it naturalized and is now grown throughout North America and parts of South America. Petite® Lucky Shamrock Mix™ was developed at Fresh Origins in San Marcos, California, the leading American producer of naturally grown microgreens and Petite® Greens since the mid-1990s. The temperate climate of southern California allows Fresh Origins to produce their high-quality greens year-round, supplying produce suppliers and chefs throughout the United States and Canada.
