Nutritional Value
Jade Sweet eggplants contain antioxidants, fiber, and potassium.
Applications
Jade Sweet eggplants are best suited for cooked applications such as grilling, roasting, sautéing, deep frying, stewing, and pickling. Their shape and size make them ideal for partially hollowing out, stuffing, and baking. When preparing in sauces rich in butter, cream, or oil, sliced Jade Sweet eggplant will benefit from first roasting slightly which will act as a means of preventing the eggplant from soaking up too much of the rich sauce. Jade Sweet eggplants pair well with onions, garlic, tomatoes, sweet and spicy peppers, zucchini, grilled and roasted meats, coconut milk, fresh and melting cheeses, and herbs such as parsley and basil. Jade Sweet eggplants will keep up to three days when stored in a cool and dry place.
Ethnic/Cultural Info

Geography/History
Eggplants are native to India and Africa and then made its way to Europe via Arab traders on the silk road.
