Description/Taste
Baby White carrots are small in size, averaging 7-10 centimeters in length, and are roughly cylindrical with a tapered and thin shape. The skin is smooth, firm, pale yellow to white, and may be covered in fine root hairs. Underneath the surface, the flesh is dense, crisp, aqueous, and also white to pale yellow. Baby White carrots are crunchy and more tender than mature carrots and have a mild, slightly sweet flavor.

Baby White carrots are regular white varieties that are harvested at an immature state, and there are also a few varieties developed intentionally for the baby carrot market. Popular white carrot varieties include White Satin, Snow White, and Lunar White. Baby White carrots are a rarer variety that is predominately found at specialty grocers and farmers markets. It was once the most common variety of carrot in Europe but was overshadowed when the orange varieties were introduced to the market.

Baby White carrots lack the pigment found in other carrot varieties, making them suitable for consumers who have a carotene-allergy. The roots also contain some fiber that can help aid in digestion and phytochemicals that can protect the overall health of the body.
Applications
Baby White carrots can be consumed raw and require no peeling, though a quick peel will reveal a more aesthetically pleasing appearance. The roots can be shredded into salads, used as a garnish, or served on appetizer plates with dips. They can also be roasted and served with cooked meats, pureed into sauces, boiled into soups and stews, or glazed with butter and sugar. Baby White carrots pair well with radishes, potatoes, tomatoes, mushrooms, shallots, garlic, ginger, chicken broth, parsley, and meats such as beef, poultry, and pork. The roots will keep up to one month when stored loosely placed in a plastic bag with good air circulation in the crisper drawer of the refrigerator. Never store fruit along with carrots, as fruits expel ethylene gas that is readily absorbed by carrots. The carrots exposed to the ethylene gas will turn very bitter, making them not suitable for eating.

In Europe, White carrots were the most common variety used for animal feed and human consumption until the 16th century when orange carrots were introduced to the market. White carrots were often mistaken for parsnips during medieval times because of their tapered appearance and pale white hues. Though these two roots belong to the same family, they are separate species with different flavors. White carrots have a sweet, mild flavor, while parsnips have a nuttier flavor. White carrots are still mistaken for parsnips today and are seen as a specialty variety due to their lack of popularity in comparison to the orange carrot.
Geography/History
White carrots were believed to be first domesticated in the Mediterranean region in the 8th century. The first illustration of a White carrot, labeled No 23 Karettes Daucus Carota, was featured in an Italian Herbal catalog in 1500 CE. Today Baby White carrots can be found at specialty grocers and farmers markets in the United States, Europe, and Asia.
