Description/Taste
Petite® Watercress White Angel™ is small in size, averaging 10-12 centimeters in length, and has flat, broad, rounded leaves with pale green stems. The circular leaves are smooth, wide, and have a unique coloring beginning with green centers that fade into white edges. There is also a central, semi-prominent green vein that branches into a few smaller veins across the surface. Petite® Watercress White Angel™ is delicate and tender with a light crunch and has a fresh, peppery flavor.

Harvested approximately 4-6 weeks after sowing, Petite® Watercress White Angel™ greens are primarily used by chefs as an edible garnish to add a piquant, peppery flavor and to elevate flavor, texture, and visual appeal to culinary dishes.

Applications
Petite® Watercress White Angel™ greens have a peppery bite that is best suited for raw applications in savory dishes. The delicate leaves will wilt if exposed to prolonged heat, but they are stronger than microgreens and can withstand vinaigrette and oils. Petite® Watercress White Angel™ can be layered on sandwiches, tossed into salads, floated on top of soup, or used as a garnish over fish and other meats. The greens can also be lightly blended into pesto, skewered on appetizer plates with ham and cheese, or sprinkled over stir-fries and pasta. Petite® Watercress White Angel™ pairs well with shrimp, crab, octopus, fish such as smoked trout, halibut, and ahi, goat cheese, blue cheese, fruits such as strawberries, oranges, peaches, mangos, and apples, potatoes, black-eyed peas, cucumbers, fennel, mushrooms, and pistachios. They will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
