Description/Taste
Micro Ruby Radish™ is very small in size, averaging 5-7 centimeters in length, and has slender, thin, magenta-purple stems with gently lobed, heart-shaped leaves. The broad, smooth, flat, and tender leaves are dark purple and are tinged with dusty green. There are also some faint purple veins running across the surface of the leaves. Micro Ruby Radish™ is crisp and succulent with a fresh green and grassy flavor that develops into a milder version of the classic spicy radish bite.

Micro Ruby Radish™ is predominately used as a garnish and its mild, pungent bite, unique shape, and tender texture elevates culinary dishes without in-depth preparation. Its deep purple hue also creates a vibrant color contrast when paired with light colored dishes such as soups, cream sauces, and white fish.

Applications
Micro Ruby Radish™ adds brilliant color and a crisp, spicy flavor that is best reserved for savory applications. It is most commonly used fresh, as a garnish and can be added to soups, stews, salads, and microgreen mixes by combining with other peppery microgreens such as micro wasabi, micro peppercress, and micro arugula. It is also commonly used in sushi, sashimi, and tempura. Micro Ruby Radish™ pairs well with cheeses such as parmesan cheese, feta cheese, goat cheese, and mozzarella, balsamic vinegar, lemon, mint, cucumber, tomato, olives, garlic, beets, fennel, pears, grapes, prosciutto, and roast beef. Micro Ruby Radish™ will keep 5-7 days when stored unwashed, in a sealed container, and in the refrigerator.

In the past five years, there has been a movement of presenting food as art, especially with the growth of social media and instant sharing. In 2015, the J. Paul Getty Museum even featured an art installation called, “The Getty Salad Garden” where artist Julia Sherman invited contemporary artists to learn about heirloom plant varieties and used them as a new art medium as they created salads together. Micro Ruby Radish™ was created at Fresh Origins Farm in San Diego, California. Fresh Origins Farm has been growing microgreens since the early 1990s under the expertise of owner and founder, David Sasuga and is using the mild, sunny climate of California mixed with proper air circulation to cultivate healthy and robust microgreens. Today Micro Ruby Radish™ can be found through select distribution partners of Fresh Origins, such as Specialty produce, across the United States.
