Description/Taste
Tiny Veggies™ Carrots are very small in size, measuring approximately 3 to 5 centimeters in length, and each carrot is attached to long slender stems with small, feathery leaves. The carrots have a bright orange hue with an elongated shape, and small hairs spread sporadically along the root. Tiny Veggies™ Carrots have a sweet flavor with earthy undertones and a tender, crunchy, and juicy texture.

Tiny Veggies™ Carrots are part of a proprietary line of specialty micro-vegetables grown by Fresh Origins farm in northern San Diego, California. The tiny roots are harvested when they are smaller than a quarter, maintaining a tender yet crunchy texture and sweet flavor. Orange carrots, botanically classified as Daucus carota subs. Sativus, are a member of the Apiaceae family along with celery, parsnips, and parsley. Fresh Origins developed their Tiny Veggies™ as an accompaniment to their microgreens line. Currently the company grows over 20 different vegetables in their Tiny Veggies™ line with an emphasis on visually appealing and flavorful varieties. Tiny Veggies™ Carrots can be consumed fully, including the leaves and stems, and can be enjoyed both cooked and raw. Tiny Veggies™ are favored by chefs as an elevated crudité, garnish, and side dish.

Tiny Veggies™ Carrots are an excellent source of vitamin A, which can help prevent vision loss, vitamin C to support the body’s immune system, and fiber to assist with digestion. The roots also contain some vitamin K, magnesium, calcium, folate, and potassium.
Applications
Tiny Veggies™ Carrots are fully edible and were designed to be enjoyed raw or cooked. Their small size makes them the perfect garnish for tray passed hors d’oeurves. The roots can be tossed into salads, blanched and floated atop pureed soups, folded into chilled grain dishes, or rolled into fresh spring rolls or wraps. Tiny Veggies™ Carrots are the ideal addition to a crudité platter, with a sweet and vegetal flavor that pairs well with a variety of dipping sauces. The micro-vegetables can also be roasted, blanched, or sauteed and served as a side dish with roasted mushrooms, grilled steak, or seared fish. Tiny Veggies™ carrots can be caramelized and used as a garnish for sweet dishes that include carrots like carrot cake, Halva, and Tzimmes. Tiny Veggies™ Carrots pair with a variety of vegetables including leafy greens such as arugula, spinach, and endive, other root vegetables like beets, turnips, and parsnips, mushrooms, garlic, and brassicas including mustard greens, kale, kohlrabi, and broccoli. The root vegetable also pairs well with poultry, lamb, and steak, as well as potatoes, sweet potatoes, and sunchokes. Tiny Veggies™ Carrots should be refrigerated for best quality and will keep up to 7 days when stored in an air-tight container.
Ethnic/Cultural Info
Orange Carrots were first cataloged in the Netherlands. A legend in the Netherlands claims orange-colored carrots were developed from their original yellow, red, and purple cousins as a tribute to Willem van Oranje. Willem van Oranje was the first Dutch King and referred to as the ‘Father of the Netherlands’. Oranje led the Dutch War of Independence against Spain the 16th century. As a celebration to Oranje and his triumph over Spain, the people of the Netherlands have adopted the color orange as a symbol of Dutch identity. Because the orange carrot was developed in the Netherlands, people began to believe that the carrot was cultivated for the same reason. Orange carrots were so common in Dutch society that they were incorporated into Dutch paintings during the Golden Age, including “The Grocer’s Shop” by Gerrit Dou, where orange carrots are featured prominently in the shop window. It has never been fully proven that orange carrots were developed for Wilem van Oranje, but it is well established that Dutch growers should be credited with their creation through crossbreeding, and the Dutch people should be credited with their rise in popularity, pushing them to become the global standard for carrots.
Geography/History
Orange Carrots are a descendant of carrot varieties that were first domesticated in the 10th century in what is now present-day Iran and Afghanistan. Orange carrot varieties were developed through breed selection in the Netherlands in the 17th century. From there they spread through Europe and eventually to North and South America. Tiny Veggies™ Carrots are a proprietary micro-vegetable grown by Fresh Origins Farms in San Marcos, California. Fresh Origins uses the mild, Southern California climate to grow their Tiny Veggies™ year-round. Fresh Origins farm was established in 1995 and has become the culinary industry’s leading producer of microgreens, petite greens, and edible flowers. The farm closely partners with chefs to create innovative varieties with unique flavors, and they also work closely with third party auditing programs to ensure the highest level of food safety at their farm and production areas.
