Description/Taste
Caulilini Sweet Stem cauliflower has long green stems with cream-colored, open florets growing in bunches at the tops. The heads are firm, with a few large, cabbage-like leaves growing around them. The entirely edible stems and flowers offer a succulent texture and sweet, nutty flavor with none of the typical brassica aroma or bitter taste.

Caulilini Sweet Stem cauliflower is a new brassica variety, botanically classified as Brassica oleracea. It was developed by the same company who introduced broccolini to market-goers back in 2000. Caulilini Sweet Stem cauliflower is 100% cauliflower, whereas broccolini is a cross between two different cultivars. Caulilini began showing up on menus in Connecticut and Washington State in the spring of 2018, soon followed by Chicago, North Carolina and New Zealand in the summer.
Nutritional Value
Caulilini contains dietary fiber, a small amount of protein and iron, and is a source of calcium and potassium. Brassica vegetables are heart-healthy vegetables.
Applications
Caulilini Sweet Stem cauliflower can be eaten raw or cooked. It can be blanched, steamed, roasted, grilled or stir-fried. Sautee Caulilini with red pepper flake, salt and pepper and toasted pine nuts for a side dish. Flash fry the florets alone or battered with tempura. Add to pasta or salads. Use Caulilini in recipes that call for traditional cauliflower or broccolini. It pairs well with Mediterranean or Asian flavors. Caulilini Sweet Stem cauliflower can be stored in the refrigerator for up to two weeks.

Caulilini Sweet Stem cauliflower is a very new variety that was introduced in 2017 and began distribution in 2018. Mann Packing along with Aruba Seed Company developed Caulilini for the commercial market and trademarked the name in the spring of 2017. It is a cauliflower hybrid, naturally selected for its long stems and sweet flavor. Caulilini Sweet Stem cauliflower is distributed by Mann, which was purchased by Del Monte in early 2018, and is available in the United States, Europe and New Zealand through select distributors.
