Description/Taste
Yellow corn is a variety of sweet corn. Each ear of corn is wrapped in tightly bound light green husks with a rugged striped texture and brown, sprout-like strings coming out the top. When the husks are removed from the corn, it reveals bright yellow kernels packed into tight, almost uniform rows. A single ear of corn measures about 14 to 23 centimeters long and can contain up to 400 kernels. The silk that grows off the top of each corn cob is white, shiny, and hair-like in texture. Yellow corn has an earthy and grassy scent. When harvested at its peak ripeness, Yellow corn tastes sweet with notes of almond and sugar. The kernels have a succulent texture that pops when bitten into. As Yellow corn matures, the kernels lose their milky consistency, giving way to a starchy and doughy consistency.

Other colors include red, orange, purple, blue, black, and multi-colored. Corn is the third biggest plant-based food source in the world and the most valuable crop in the United States. Most of the corn grown in the United States is used as livestock feed or for processed foods like tortilla chips and cereal. Corn is often converted into oil and used for non-edible items like soap, paint, ink, and biodiesel. Corn husks have been used in folk art to make objects like amulets, dolls, and autumnal decor.

Yellow corn is a source of vitamins A and B, specifically B5, B9, B6, and B3. These vitamins are important for vision, immunity, skin health, brain function, nervous system, and energy production. It also contains phosphorus, magnesium, and potassium, particularly in its popcorn form. These minerals help grow and maintain body tissues, control blood pressure, improve heart health, and may be linked to reduced risk of chronic illnesses like heart disease. Yellow corn contains lutein and zeaxanthin, antioxidants that promote eye health and may reduce the risk of visual impairments like macular degeneration and cataracts. Popcorn consumption may be linked to a reduced risk of diverticulosis, a condition that causes colon complications like cramps, flatulence, and bloating. One of the most popular ways to consume it is on the cob, where the corn is boiled or roasted, then coated with butter or oil, and seasoned with spices. The kernels can also be cut off the cob and used as an ingredient in salsas, tacos, pasta, salad, risotto, pizza, corn chowder, and other soups. In the United States, Yellow corn is used to make corn pudding, polenta, griddle cakes, creamed corn, grits, and cornbread. Yellow corn is dried and ground into flour for baked goods, tortillas, arepas, tamales, and cereals. Cornmeal and cornflakes can be used to create a crunchy or crispy texture. Yellow corn oil is used as a sweetener in foods and beverages and as a base for alcohols like whiskey and bourbon. Yellow corn pairs well with black beans, quinoa, edamame, potatoes, fruit salad, white and brown rice, pork, grilled chicken, white fish, salmon, tomatoes, salsa, salad greens, lemon, lime, bacon crumbles, and soy sauce. It can go with dairy products like butter, mayonnaise, sour cream, parmesan, and blue, cotija, and goat cheese. This crop spread to what is now the state of Maine by the time European colonists settled in North America. The Natives taught these settlers how to grow corn. The Europeans then brought corn back to Europe and continued to spread it to different areas of the world. The ancestral source of sweet corn is an Andean variety called Chulpe. This corn contains the quintessential sugary gene that is characteristic of sweet corn. Though White corn is preferred in Latin cultures, Yellow corn is most often used for masa and tortilla making. Yellow corn is widely grown for both fresh consumption and grain production in the Midwest and Northeast regions of America.
Geography/History
Yellow corn is native to Mexico and is believed to be a descendant of a wild grass called Balsas teosinte. It can be grown in a variety of climates, though it requires warm weather to grow. In colder countries like Canada and Russia, Yellow corn must be harvested in the summer. Though its ancient ancestors were found growing in the wild, modern Yellow corn is not. It’s a cultivated crop that's been bred for thousands of years and is now found growing in gardens and for commercial production. Though corn itself was popularized in different areas of North America by natives and later introduced to Europe by returning colonists, Yellow corn rose to popularity in the late 1800s. A variety known as Pennsylvania yellow began to gain popularity among consumers, which likely influenced the association of corn with the color yellow in modern United States culture. As one of the most popular products worldwide, Yellow corn may be found in grocery stores, farmers' markets, and home gardens worldwide.
