Mustard MicroFlowers™ are made up petite flowers that form in an umbel shape. Each flower is made up of four canary yellow petals attached to a central core and short, slender, green stem. The central core contains one yellow pistil and four to six shorter yellow stamens. Mustard MicroFlowers™ have tender, soft petals that are delicate and may bruise easily. The flavor of Mustard MicroFlowers™ is similar to that of broccoli rabe with a slight spiciness and peppery undertones.

Mustard MicroFlowers™ are a member of the Brassicaceae or Cruciferae family and of the species Brassica. Currently the seeds of the mustard flower are used mainly in the production of the condiment mustard and also to produce the seasoning, dry mustard powder.
Mustard MicroFlowers™ make an attractive addition to green and grain salads. Serve atop quiche, deviled eggs or frittatas as a garnish. The flowers can be pureed into a mustard sauce or hummus. Combine with herbs and add to the brine for pickled cucumbers, peppers and carrots.
